What you'll need: (for the muffins)
- Oat Flour, Baking Powder, Chia Seeds, Cinnamon & Salt-
- Maple Syrup, Almond Milk, Vanilla-
What you'll need (for the coconut cream topping:
-1 can of refrigerated (for 1/2 day) coconut Milk, Maple Syrup, Vanilla OPTIONAL lemon.
Instructions: Preheat oven 300, Get out and line muffin tin. Mix all the dry ingredients, and mix all the wet ingredients and pour together.
bake for 20-25 minutes or until golden Brown.
Top with coconut cream topping: Whip hardened part of coconut can (refrigerate for 1/2 day- can will be half liquid, half hard when you open it- pour liquid into a glass and only use the hardened part to whip.
Add 1 tsp maple syrup and 1 tsp vanilla after whipping
Put in fridge and then TOP when muffins are cooled!
