You'll Need:
-Various Veggies that you enjoy being roasted
-Chicken (or veggie) Broth,
-A box of Orzo
-Feta
-Nuts to Roast (I've used slivered Almonds and Pine nuts before)
-Lemon juice, Olive Oil, Salt + Pepper for the dressing.
INSTRUCTIONS:
Cut and then Roast Veggies at 350F for 25-30minutes mixing them with olive oil, salt and pepper.
Toast nuts at same temp for 5-6 minutes (watch them so they don't burn) I use almonds in the video, but pine nuts are wonderful too!
Make the dressing (to put on top for later) Juice of 2 Lemons, 2 TBSP Olive Oil, salt and pepper
Brown the Orzo in a pan (Heat oil in a pan, toast/or brown the orzo, then add 1.5 cups of the broth. Bring to a Simmer, then turn to low to cook for 15 minutes.
Once the Orzo is done, remove from pan, add to bowl, add roasted veggies over the bowl, add the dressing and toasted nuts.
Serve Warm, or chilled. It's also a great dish to bring to people in need.
